Cajun Inspired Maque Choux. (quick and easy)

12 oz smoked or andouille sausage, cut into ¼ inch wheels.  

1 large onion, slivered

Several peppers, any type and color, chopped

1 jalapeno

4 cloves garlic, finely chopped

½ pound  fresh beans, cleaned and cut in bite-sized pieces

3-4 ears sweet corn, raw sliced off the cob.  

Fresh thyme  – 2 tsps.

bacon grease or olive oil

salt and pepper to taste

Saute sausage wheels until browned.  Remove from the pan.  Leave the residual grease in the pan.  Heat  1 T. of olive oil or bacon grease.  Add the onion, peppers, jalapeno , garlic, thyme and beans.  Saute until the beans are crispy cooked. Add the raw corn and sausage and heat through.  Salt and pepper to taste.
