SWEDISH SPRING RADISH SALAD


2 teaspoons white wine vinegar

2 teaspoons canola, corn or olive oil

2 teaspoons chopped fresh oregano or cilantro

1 teaspoon caraway seed

1 garlic clove or fresh garlic, minced

1 pinch sugar

1 pinch salt 

1 pinch pepper

15-20 radishes, shaved or sliced thin. Soak in cold water with a little salt for 30 minutes. 

Sliced green onion.  Use both green and white parts.  

In a small bowl whisk everything except radishes.  Add to drained radishes.   Cover and refrigerate at least 1 hour before serving.
