Neighbor Donna’s Rhubarb Pudding Cake

2 c. chopped rhubarb
¾ c sugar +1/4 c sugar for topping
3 Tbsp softened butter
1 tsp baking powder
¼ tsp salt
½ c milk
½ tsp vanilla extract
½ tsp almond extract
1 c sifted flour
1 Tbsp cornstarch
2/3 c boiling water

Cover bottom of 8” square baking dish with fruit
Mix ¾ c sugar, butter, baking powder, salt extracts, milk and flour.
(Add a little more milk if too thick to pour)
Pour over fruit.
Mix remaining sugar (1/4 c) + cornstarch. Sprinkle over mixture in the pan.
Pour boiling water over the top.
Bake at 375 degrees for 45 minutes.
