Baked Parmesan Zucchini Sticks

4 zucchini or another summer squash, quartered lengthwise
½ cup grated parmesan cheese
½ tsp each of dried thyme oregano, basil, and garlic powder
Kosher salt and ground pepper, to taste
2 tablespoons olive oil
2 tablespoons chopped parsley leaves

Preheat the oven to 350 degrees. Coat a cooling rack with nonstick cooking spray and place on a baking sheet; set aside.

In a small bowl combine Parmesan, with herbs and spices.

Place squash quarters onto prepared baking sheet. Drizzle with olive oil and sprinkle with Parmesan mixture. Bake until tender, about 15 minutes. Then broil for 2-3 minutes until crisp and golden. Serve immediately, garnished with parsley, if desired.
