Swiss Chard and Sausage Frittata

 

Extra Virgin Olive Oil

1 pound Spicy Italian Sausage (remove from casing)

1 red onion (thinly sliced)

3 cloves garlic (minced)  or use garlic scapes

2 “bunches” Swiss chard

8 eggs

Grated pecorino cheese as an optional topping

 

Preheat oven to 350F
In a large nonstick pan over medium-high heat, brown the sausage in olive oil, breaking up as it cooks. Drain off extra fat.  Add the red onion and chard.  Wilt the chard but don’t cook completely down.

Crack eggs into a large bowl, add the garlic and whisk together.  Add the contents of the saute pan and stir to mix.  Season generously with salt and pepper.

Transfer back to the saute pan.  Top with grated pecorino.  Place into the oven and cook until set and broil just before serving until the Pecorino is golden brown.  Slice into wedges and serve.

(This could be cooked on the stovetop as well)
