Sweet and Sour Coleslaw

About 2 pounds of cabbage red or green, cored and shredded
½ cup sugar
½ cup vegetable oil
3 tablespoons fresh lemon juice
½ teaspoon poppy seeds
2 carrots, peeled and grated

Toss the cabbage with the sugar and 1 teaspoon salt and allow to sit in a colander for 1 hour or up to 4 hours.

Whisk the lemon juice, oil, poppy seeds, 1 teaspoon salt and ¼ t pepper in a large bowl that will hold the salad.

Add the wilted cabbage and carrots and toss. Chill for at least 1 hour before serving and up to 3 days. Season to taste. Add a dash of lemon juice to freshen before serving.
