Eggplant Margarita Pizzas

Eggplant Slices
Low fat grated mozzarella cheese
Tomato paste
Garlic powder
Italian pizza herbs

1. Panfry eggplant slices and finely chopped onion with a little garlic olive oil until just tender.
2. Spread tomato paste onto slices and season with garlic powder and Italian pizza herbs. Top with grated low fat mozzarella cheese and grill/broil on medium heat for 10 minutes or until the cheese has melted! OR microwave for 1 ¬ 2 minutes for a faster cook time.
