Crustless Quiche

2 cups sliced asparagus (or a large double handful of Swiss chard or spinach leaves)
1/3 cup chopped onion (green onions are great with lots of green tops)
Handful of Hormel real crumbled bacon
1/3 cup chopped red bell pepper
1 cup shredded Cheddar cheese (4 ounces) or any favorite or combination
½ cup Original Bisquick™ mix
1 cup milk
½ teaspoon salt
¼ teaspoon pepper
2 eggs

1. Heat oven to 400ºF. Saute onions and bacon bits in a bit of olive oil or bacon grease. Grease 9-inch pie plate. Add asparagus and red pepper and cook about 5 minutes or until almost tender. Stir together cooked asparagus, onion, bell pepper and cheese in pie plate.
2. Stir remaining ingredients until blended. Pour into pie plate.
3. Bake 35 to 45 minutes or until golden brown and knife inserted in center comes out clean. Cool 5 minutes.
