Crispy Bok (Pac) Choi Salad

1/4 c butter

1T sugar

1 T sesame seeds

1 package Ramen noodles (not the flavor packet)

2 ounces packaged sliced almonds

1 heads bok choi (2 heads pac choi­) or Chinese cabbaage. Use both leaves and stems.

5 green onions

Feel free to add some red cabbage, dried cranberries or mandarin oranges for color.

 

Melt butter and add seeds.  Break up and add the DRY  noodles, almonds and sugar.  Brown lightly, cool and mix with chopped greens and stems.

 

Dressing: mix prior to serving time.  Add just before serving.

 

6 T vegetable oil

3 T red wine vinegar

¼ cup sugar

1 T soy sauce (or more to taste)
