Veggie and Quinoa Salad

2 1l2 cups water
1 ¼ cups quinoa,, rinsed

3 T lemon juice
1 T lime juice
3 T olive oil
1 t dried Italian seasoning
¼ t black pepper
1 t sea salt
½ t garlic powder

1-2 diced cucumber
1-2 diced tomatoes Roma type
1 chopped pepper; red, green or some of each
1 bunch green onions, thinly sliced
½ c sliced black olives
1/3 c fresh chopped parsley

1/3 cup roasted sunflower seeds, or pistachios, or chopped walnuts
(1 can rinsed and drained black beans) optional protein source for a complete
meal.

In a medium saucepan, bring the water to a boil. Add the quinoa, cover, and reduce the heat to low. Simmer for 15 minutes. Drain any excess water. Set aside to cool.

Prepare the vegetables and mix in a large bowl.
In a small bowl whisk together the lemon juice, lime juice, oil, and seasonings. Pour over the vegetables and toss gently. Add the quinoa, nuts, and beans if desired.

Cover and chill for 45 minutes to blend the flavors.
