Kohlrabi Smash

This is a great, healthy alternative to potatoes. Sometimes I use a little shredded cheese as a topping.
1-2 Large Kohlrabi (about 4 cups), cubed
2 Tbsp Butter
1/2 Cup Milk
1 1/2 Tbsp Sour Cream
1/2 c chopped onion
2 Cloves Garlic or scapes, chopped
Salt and Pepper to taste

1. Put a medium pot of water to boil.
2. Peel and cut kohlrabi into cubes. Add to pot of water. Lightly salt water and boil at least 15 minutes until kohlrabi is fork tender.
3. While the kohlrabi cooks, chop the onion and garlic.
Leave the milk ready on the side.
4. When the kolhrabi is fork tender drain and return to the pot. Add garlic, onions, sour cream, and butter to the pot. Mash as you would potatoes or use a hand blender, adding milk as needed to achieve your desired consistency. I like it chunky like a cauliflower mash. Perhaps top with a bit of grated cheese.
6. Heat through as needed.
